Here's a good Valentines Day recipe to make for the ones you love!
 
LOVE CAKE
1 stick of butter, cut into pieces
6 oz. white chocolate, finely chopped
1 plain white cake mix
1 cup whole milk
3 large eggs
2 tsp. vanilla extract
 
BERRY BUTTERCREAM FROSTING
3/4 cup fresh strawberries
1 stick butter at room temperature
3 3/4 cups confectioners sugar, sifted
 
Preheat oven to 350.  Grease and flour one 9 inch square cake pan and one 9 inch round cake pan.  Place butter and white chocolate in saucepan over low heat.  Cook, stirring until both are completely melted, about 3-4 minutes.  Place the cake mix, milk, eggs, vanilla, and melted butter and white chocolate in mixing bowl.  Blend with electric mixer on low speed 1 minute.  Increase speed to medium and beat 2 minutes more.  The batter should look well blended.  Divide batter between the two pans. Bake at 350 for 27-30 minutes. 
 
FROSTING:
Puree strawberries - you should have about 1/2 cup of puree.  Place butter in mixing bowl and blend on low speed until fluffy, about 30 seconds.  Add the sifted confectioners sugar and berry puree, blend on low speed until sugar is combined, about 1  minute.  Increase mixer speed to medium and beat until light and fluffy. If frosting seems too stiff, add milk a few drops at a time until desired consistency..  If frosting seems too thin, add confectioners sugar a tsp. at a time until desired consistency.
 
ASSEMBLY:  Place the square cake on a platter with one of the corners facing you at the bottom to form the "point" of the heart.  Cut the round cake in half, placing each half on adjoining sides of the square to form heart shape.  Frost with berry buttercream frosting.  Can decorate by scattering shaved white chocolate curls on top and strawberries around cake on platter.
