MARCH RECIPES
IRISH ALMOND AND CARAWAY CAKE:
1 plain yellow cake mix
1 package vanilla instant pudding mix
1/2 cup vegetable oil
1/2 cup water
1/3 cup Irish whiskey
4 large eggs
1 cup finely chopped slivered almonds
1 tbsp. caraway seeds
1 tsp. lemon zest
GLAZE:
1 cup confectioners sugar
2 tbsp. fresh lemon juice
1 tbsp. Irish whiskey
Preheat oven to 325. Grease 12 cup Bundt cake pan.
Place cake mix, pudding mix, oil, water, whiskey and eggs in mixing bowl. Beat with electric mixer on low for 1 minute.
Increase speed to medium, beat 2 minutes more. Batter should look thick and well blended. Fold in almonds, caraway
seeds and lemon zest. Pour batter into pan. Bake at 325 for 48-52 minutes.
For glaze, combine confectioners sugar, lemon juice and whiskey
in a small bowl, stirring with wooden spoon until smooth. Drizzle over cooled cake.
This one is good for easter - the pink color almost makes it
look like a big easter egg!
STRAWBERRY APPLESAUCE CAKE
1 plain white cake mix
10 oz. package of frozen strawberries in syrup, thawed and
pureed
1/2 cup sweetened applesauce
2 large eggs
FROSTING:
4 oz. reduced fat cream cheese at room temperature
1/2 cup strawberry preserves or sweetened, sliced strawberries
1/2 cup confectioners sugar, sifted
1 drop red food coloring (optional)
Preheat oven to 350. Lightly mist 12 cup Bundt cake pan.
Place cake mix, strawberry puree, applesauce and eggs in mixing bowl. Blend with electric mixer on low 1 minute.
Increase speed to medium and beat 2 minutes more. The batter should look well combined and thickened. Pour batter
in pan. Bake at 350 for 30-35 minutes.
FROSTING:
Place cream cheese and strawberry preserves in mixing bowl.
Blend on low speed until just combined, 30 seconds. Add confectioners sugar and red food coloring if desired.
Increase mixer speed to medium, beat until fluffy, 1 minute more. Spread over top and sides of cooled cake.
