HAPPY MOTHER'S DAY to all the mothers out there - and grandmothers, aunts, foster mothers
- ANYONE that mothers a child, whether it's yours by birth or by choice. It's one of the hardest - and
one of the most rewarding - jobs in the world. :)
Also a big thank you to all our men and women in the Armed Forces - we have you all to thank for
our whole way of life in this country. :)

Now to the good stuff - the recipes! LOL
I think any mom or surrogate mom would be very pleasantly surprised to have this cake waiting for
her on Mothers Day. I wish I had a picture to show you - it really is a BEAUTIFUL cake and looks like it would be so
hard to make, but it couldn't be easier! It's also light for the warmer weather, and, if you take mom out to eat she can still
have room for this dessert!
FANTASY ANGEL FOOD CAKE
1 package angel food cake mix
Red and green food coloring (or any combination of colors - the red and green don't look christmasy
though, think "mint" green and pink).
1 container cream cheese frosting
Preheat oven to 350. Prepare cake following package directions. Divide batter into thirds
in different mixing bowls. Add a few drops of red food coloring to one. Add a few drops of green food coloring
to another. Stir each until blended. Leave the third one plain. Spoon pink bater into ungreased 10 inch
tube pan. Cover with white batter and top with green batter. Bake and cool following package directions.
To make glaze, heat frosting in microwave 20-30 seconds. Do not overheat. Stir until smooth. Set aside
1/4 cup warm glaze. Sppoon remaining glze on top and side of cake to cover. Divide remaining glaze in half and
place in 2 bowls. Add few drops red food coloring to one. Add a few drops of green food coloring to the other.
Stir each until blended. Drizzle the green glaze around the cake edge so it runs down side. Repeat with pink glaze.
You could also use more food coloring for bolder colors and make this cake red, white and blue for
Memorial Day or Armed Forces Day!

TIP: While I've never had an occasion to use this recipe in this way, I always thought it would
be great for bridal or baby showers. You could use food coloring to match the wedding colors or nursery colors instead
of the red and green.
